These Blue Dot grade short ribs hold intense marbling through and through. Blue Dot reserve beef is hand raised and handpicked on small family farms right here in Canada. They are graded as the top 1/3 of the AAA grade beef and are often used as a product in fine dining restaurants.
These ribs are cut along the bone and cleaned and prepped so it's ready for cooking immediately when you need it.

These ribs can be smoked or slow cooked using your favorite method. Your patience in the cooking process will reward you with a fall off the bone piece of meat heaven. This is easily one of our favorite cuts to experiment with when it come to rubs and smoking methods.
