We recommend cooking this cut medium rare as you would a rib steak or strip steak. The fat cap is an integral part of this piece and one of the reasons this cut can be called a Picanha so don't remove it! Sear the fat nicely along with the rest of the piece and enjoy this delicious traditional Brazilian cut.
